Roasted Pepper Tuna Melt

The classic tuna melt is appearing on menus everywhere, proving that some nostalgic meals still deserve a place at the table. This easy sandwich has sweet roasted peppers for a nice twist, and the sharp cheddar completes it.

Ingredients

  • 2 3-ounce cans tuna
  • 1/4 cup mayonnaise
  • 1 teaspoon pressed garlic
  • 2 scallions, chopped
  • 1 roasted red pepper, drained and chopped
  • 4 slices of bread
  • Butter
  • 2 slices sharp cheddar cheese, thinly sliced

Preparation

  1. Drain the tuna, reserving 2 teaspoons of the oil. Place tuna in a medium bowl and add the mayo, garlic, reserved oil, scallions and red pepper and stir to mix.
  2. Butter one side of each slice of bread. Place two slices on the cutting board, buttered side down, and divide the tuna salad between them, spreading it evenly on the bread. Top with cheese slices and place the other slices of bread on top, buttered side up.
  3. Preheat a large cast iron skillet for 4 minutes before placing the sandwiches in the pan. Turn to medium-low and cook for 3 to 4 minutes per side, until golden and melty.

Tuna melts are a quick and easy dinner! Serve with a side salad, chips or a crunchy dill pickle.
